รูปแบบการพัฒนาการผลิตมันเส้นสะอาดสำหรับเกษตรกร |

การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อ 1) ศึกษาสภาพการผลิตมันเส้นของเกษตรกร 2) พัฒนารูปแบบการผลิตมันเส้นสะอาด สำหรับเกษตรกร การวิจัยแบ่งเป็น 2 ระยะ คือ 1) การศึกษาสภาพการผลิตมันเส้นของเกษตรกร ประชากรคือเกษตรกรผู้ผลิตมันสำปะหลัง จังหวัดนครพนมที่ขึ้นทะเบียนในปีการผลิตที่ 2554/2555 มีพื้นที่ไม่เกิน 5 ไร่ จำนวน 4,758 คน สุ่มตัวอย่างแบบง่าย ได้กลุ่มตัวอย่าง 369 คน เก็บข้อมูลโดยแบบสัมภาษณ์ วิเคราะห์ข้อมูลด้วยโปรแกรมคอมพิวเตอร์ อธิบายลักษณะข้อมูลทั่วไป โดยการแจกแจงความถี่ ร้อยละ ค่าเฉลี่ย ค่าต่ำสุด ค่าสูงสุด และส่วนเบี่ยงเบนมาตรฐาน 2) การพัฒนารูปแบบการผลิตมันเส้นสะอาดสำหรับเกษตรกร ประชากรคือผู้รู้ 3 กลุ่ม ประกอบด้วยเกษตรกรในระยะที่ 1 จำนวน 4,758 คน เจ้าหน้าที่ส่งเสริมการเกษตรจังหวัดนครพนม 104 คน และ เจ้าของลานมัน 3 คน สุ่มตัวอย่างเกษตรกรมาทั้งหมด 30 คน และสุ่มตัวอย่างเจ้าหน้าที่ส่งเสริมการเกษตร 23 คนโดยวิธีการสุ่ม แบบหลายขั้นตอน และเจ้าของลานมันทั้งหมด 3 คน เก็บข้อมูลโดยการสนทนากลุ่ม และใช้แบบสอบถามวิเคราะห์ข้อมูลเชิงพรรณนา โดยใช้ร้อยละและค่าเฉลี่ย ผลการวิจัยพบว่า 1) เกษตรกรเกือบสองในสามมีความรู้ในด้านการผลิตมันเส้นน้อย ส่วนใหญ่ไม่เคยผลิตมันเส้น มีประสบการณ์ ในการผลิตมันเส้นเฉลี่ย 3.04 ปี เหตุผลในการผลิตมันเส้นมากที่สุด คือการมีรายได้มากกว่าขายหัวมันสำปะหลังสด แหล่งที่ได้รับความรู้ การผลิตมันเส้นมากที่สุด คือเพื่อนบ้าน เกษตรกรมีความพึงพอใจในการผลิตมันเส้นในระดับมากและสามในสี่สนใจที่จะรับการถ่ายทอด ความรู้การผลิตมันเส้นสะอาด 2) รูปแบบการผลิตมันเส้นสำหรับเกษตรกรผู้รู้ทดสอบกระบวนการผลิต 2 ครั้ง ปรับปรุงกระบวนการผลิต 4 ครั้ง ประเมินความคิดเห็นต่อกระบวนการผลิต 1 ครั้ง (1) ได้กระบวนการผลิตมันเส้นสะอาดประกอบด้วย การเตรียมหัวมันสำปะหลัง การสับมัน การตาก และการเก็บรักษา การพัฒนารูปแบบการผลิตมันเส้นสะอาดสำหรับเกษตรกร (2) ได้รูปแบบที่ประกอบด้วย เกษตรกร ผู้ซื้อ มาตรฐานมันเส้นสะอาด ทฤษฎีการเรียนรู้ และกระบวนการผลิตมันเส้นสะอาด คำสำคัญ : มันเส้น / กระบวนการผลิตมันเส้นสะอาด / การพัฒนารูปแบบ หมายเลข DOI : 10.14456/npuj.2015.17 |

The purposes of this study were: 1) to investigate the state of farmers’ producing the cassava chips, 2) to develop a pattern of farmers’ producing the clean cassava chips. The study was divided into 2 stages: 1) Investigating the state of farmers’ producing the cassava chips. The population was 4,758 farmers producing cassava in Nakhon Phanom province who registered in the 20111/2012 producing year with a land area not exceeding 5 rai. A sample of 369 farmers was selected by simple random sampling. Data were collected by interview and analyzed by computer program. General information was described using frequency, percentage, mean, minimum value, maximum value and standard deviation. 2) Developing a pattern of farmers’ producing the clean cassava chips. The population was 3 groups of knowers consisting of 4,758 farmers in stage 1, 104 agricultural promoting officers of Nakhon Phanom province and 3 owners of drying grounds. Of all the farmers, 30 were randomly selected and 23 agricultural promoting officers were selected by multi-stage random sampling. All the 3 owners of cassava drying grounds were included. Data were collected using focus group discussion and questionnaire. Descriptive analysis was conducted using percentage and mean. The findings revealed as follows: 1) Almost two thirds of farmers had low knowledge in producing cassava chips. Most of them had never produced them before. Their average cassava chips producing experience was 3.04 years. The significant reason for producing cassava chips was to have more income than selling fresh cassava. The source to gain most of the knowledge in producing cassava chips was neighbor. The farmers were satisfied with producing cassava chips at high level, and three fourths of them were interested in getting knowledge of clean cassava chips production. 2) In a pattern of producing the cassava chips, it was found after 2 times of testing the producing process among the learned farmers, 4 times of improving the producing process and 1 time of assessing the opinion on the producing process. The clean cassava chips producing process comprises 1) preparation of cassava, chopping it, drying it, and storing it. Upon the development of pattern in producing clean cassava chips for farmers, a pattern found comprises farmers, purchasers, clean cassava chips standard, theory of learning and clean cassava chips producing process.
